WHAT IS MATCHA?

Matcha (pronounced Mat-cha), is a high-grade green tea ground into powdered form.

The best matcha hails from Japan, particularly the southern half of the country. It is special in two aspects of farming and processing: the green tea plants used for matcha are shade-grown for three to four weeks before harvest, and the stems and veins are removed during processing. During shaded growth, the plant Camellia sinensis produces more  theanine and caffeine.

Only the newest spring buds and three leaves of the shade grown tea plants are hand-plucked for matcha production. Once harvested, the leaves are processed in many complicated procedures. Therefore, the window for production is very limited, which is one of the reasons matcha is one of the most expensive teas.

WHY IS IT A SUPERFOOD?

Matcha, like other green teas, contains a class of antioxidants called catechins. Matcha is high in a catechin called EGCG (epigallocatechin gallate), which is 137 times the antioxidants compared with the regular green tea, and believed to have cancer-fighting effects on the body. Studies have linked matcha to a variety of health benefits, like helping to prevent heart disease, type 2 diabetes and cancer, and even encouraging weight loss.

Matcha tea is also a source of various vitamin, trace minerals such as vitamin E, vitamin A, vitamin C, vitamin K and vitamin B.
